Ever wondered why green pea cookies are round and green? Well -- the recipe actually began as a Chinese New Year festive cookie. And apparently, the first green pea cookies were made to resemble jade rings, in accordance with Chinese tradition. Jade is green and it is a treasure in the Chinese culture. It is believed that jade rings is a symbol of nobility, good luck and wealth. This is what a jade ring looks like:
